Black Pepper Crab

An old family favourite, inspired by my mum's uncle who used to make it for special occasions. A restaurant quality dish made with just a few ingredients. Once the juices from the fresh blue swimmers mix in with the black pepper sauce you have this amazing sweet and peppery dish that will want you eating crab more often.


To cook 1kg of Blue Swimmer crabs (can feed 4 people): (Heres a LINK to Woolworths of some of the items below - Always check pricing and preference)


1 KG fresh blue swimmer crab cut and cleaned

60 GMs of salted butter

1 TBSP of black pepper corns

1 TBSP of white pepper

3 TBSP of Kecap Manis

2 TBSP of Oyster Sauce

1/2 TSP of salt

500 ml of water

1 TBSP of Cornflour and 50ml of water to mix it


And all you need to do is:

  1. With a pestle and mortar grind down the pepper corn

  2. On medium heat, using a wok melt the butter, add Kecap Manis, Oyster sauce and stir

  3. Add pepper, white pepper and salt and stir though

  4. Add crab and stir until it's coated with the dark pepper sauce

  5. Add water, close the lid and simmer for 15 minutes

  6. Mix cornflour with 50ml water

  7. Remove lid, stir for 5 minutes and add cornflour mix

  8. Continue stirring for 5 minutes until sauce thickens

  9. Serve hot. Finish the sauce with bread
